Alex Whitmore founded TAZA Chocolate in 2005 after a trip to Oaxaca, Mexico where he first encountered stone ground chocolate. Winter is coming so it is finally time to cut down in gym time and start loading some chocolate! We start the story in late 2008.

After relocating to Boston a few months earlier, Avery and Janet were looking to launch their first products. Alex Whitmore, the founder of TAZA, took his very first bite into the stone ground chocolate as he traveled to Oaxaca, Mexico. Parking is first come, first-served and cannot be guaranteed.

Students for Environmen­tal Action (SEA) organized and sponsored a trip to Somerville, Mass. TAZA Chocolate is a Mexican-inspired stone round, organic chocolate manufacturer based in Somerville, MA, USA. TAZA Chocolate is located at 561 Windsor St., between Inman Square and Union Square in Somerville, MA.

Next stop-back to the store where there are windows into the factory and we could see the chocolate being made. Each flavor was so good that we did not chew each piece, but let it melt slowly, savoring it until there was nothing left on our tongues.

TAZA doesn’t add any soy or dairy to their chocolates and because it is stone ground, all the chocolates have this coarse “stone ground” texture to them, which is pretty neat. Tours of the TAZA Chocolate Factory are offered to the public from Tuesday to Sunday.

TAZA Chocolate is unlike any I’ve ever experienced. Bryan and I ended up sitting with a bunch of folks who worked at TAZA Chocolate, which was super fun. It is fun and educational at the same time.


A little piece of Europe in the heart of New England it has, for the time being, become one my favorite American destination. This is one of the best tours we’ve ever taken. One piece of lamb was marinated with cocoa nib juice and cooked sous vide in the immersion circulator for hours.

Each tour lasts approximately 45 minutes and is best suited for ages 10 and up, as the tour offers quite a bit of information on the chocolate-making process. After covering the basics in the Cacao Corner, it was time to head behind the doors of the factory. There's no wonder why Willy Wonka & the Chocolate Factory was such a popular movie. The chocolate is then melted and shaped into disks or rectangles.

TAZA Chocolate was founded by Alex Whitmore in 2005. He discovered this unique, stone-ground chocolate while traveling to Oaxaca, Mexico. They are then hermetically sealed in bags like those in this picture, and shipped directly to the TAZA factory in Somerville.

TAZA purchases the organic cacao beans from selected farm suppliers and completes the re­maining process, including the grinding, roasting, shaping, de­sign, packaging, promoting and selling within the factory. TAZA partners only with cacao producers who respect the rights of workers and the environment.

If the short factory tour leaves you wanting more, TAZA actually runs international trips every year or so to really get a deep understanding of the chocolate-making process. TAZA has to rely on their on-site mechanical engineer to figure out what is wrong and if necessary create parts for them to fix the problem.
